Whether its baking or desserts every now and again we all deserve a bit of something sweet in our lives.
Now i do not profess to be a master baker, but all my efforts that are recorded on these pages have been tried and tested, and if i can do them so can you. I have chosen recipes that are easy to follow and hopefully the simple step by step instructions are will keep you right. I’m guilty of not following a recipe so if you deviate slightly don’t worry too much it usually turns out ok.

I was actually making Brownies when i inadvertently strayed from the recipe and put an egg in the mixture by mistake, thus my Banana Peanut butter muffins were created.

Lemon Drizzle Loaf is by far one on my favourite cakes to bake. Its easy and only takes about 15 mins to prepare and 40 mins to bake. The all in one bowl method really appeals to me when i am baking, this simply means everything goes in together in one go, so there is no need to cream butter and sugar beforehand. Its just so time saving.
That said there are a few handy things you should remember, like letting it cool in the loaf tin before putting the drizzle glaze on, this is a simple sugar and lemon juice mixture and using a skewer to poke holes in it before you drizzle over the topping, so that it seeps into the loaf evenly. Taking your time with these two things will help ensure you loaf is not too moist.
It will keep in an airtight container {as long as you hide it} for 3 days and will freeze for up to two months if unsliced and wrapped tightly in clingfilm.
Ingredients
175g Caster Sugar
175g unsalted butter {softened}
175g Self-raising flour
3 eggs
3/4 tsp Baking Powder
Zest of a Lemon.
For the Topping
Juice of a Lemon
100g Granulated Sugar
